This is a brie style cheese and comes in various sizes. It has the classic brie flavour and texture and is great served at room temperature with a selection of fruit or some sweet chutney, or even some tangy jam.
The name St Bartie's comes from St Bartholomew's Church at Benthall, which we can see from the farm and the cheese room. It is next to Benthall Hall a National Trust property.. The church there has many fond memories for our family for marriages and baptisms, but sadly is no longer in operation for church services.
This is a halloumi style cheese. You know the one - the squeaky cheese!. It is lovely fried and served with a sweet chilli dip or served with a fruity salad. It has that distinct halloumi savoury salty flavour - delish!!. This is of course made with cows milk, so not the traditional sheep or goat milk, but we think it tastes just as good.
The name Harley also comes from the local area. A village not far from Much Wenlock, where we keep some of our sheep. It's a very pretty village that nestles in the valley below the Wenlock Edge.
This is a gouda style cheese, creamy and fairly mild, but with a hint of tang! It is matured for 4 months or more and longer means stronger in this case. It is great used as you would any hard cheese. It melts really well for a flavoursome welsh rarebit or on top of a cottage pie. It is exceptionally good eaten with crackers, pickles and chutneys. It also makes extremely good fondue.
The name is taken from a famous local landmark, The Wenlock Edge, neatly shortened to The Wedge, which we thought very appropriate for a cheese. Who can't resist a wedge of cheese?
This is a fresh cheese, similar in some ways to a Feta, except again made with cows milk. This fresh cheese is mild and firm. It is great chopped into a salad or served in chunks with some olives. It;s even good sliced in a sandwich with some chutney or served on the trusty crackers.
The name Farley is also taken from the local area. Farley is a hamlet a stone's throw away from the cheese room and close to Much Wenlock. You can see a theme running here as we like the alliteration of Farley Fresh, and Harley Halloumi
